INGREDIENTS:
4 baking potatoes 2 tablespoons softened butter salt and pepper to taste
pinch nutmeg 1 egg, well beaten 1 cup grated Mozzarella
3 tablespoons grated Parmesan or Romano cheese



1 Preheat oven to 350 F. Select uniform size potatoes; wash, scrub and dry them. Grease lightly with butter and puncture with fork. Bake about 1 hour. When done, remove from oven and allow to cool slightly. Cut potatoes lengthwise into halves and remove pulp carefully without breaking the skin. Mash pulp with butter, salt, pepper and nutmeg. Add egg, mozzarella and grated cheese. Fill potato shells with mixture, garnish with paprika and place under broiler until browned.
