Crispy Dried Shrimp Pies (Pasteis de Camarao)

INGREDIENTS:
1 tablespoon butter 1 cup flour 1 dash salt
1 cup milk 1 basic recipe Shrimp Sauce 3 eggs, beaten
2 cups dry bread crumbs oil for frying



1 Make a dough as follows: work butter into the four, add salt, and gradually add milk, mixing until smooth. Cook in a heavy saucepan until very thick. Cool. Roll on a floured board to 1/4 inch thickness. Cut dough with a 3-inch round cooky cutter. Place a spoonful of the shrimp sauce on each, fold over, and press edges together with fork to close tighly. Dip each pie in beaten eggs and coat with bread crumbs. Fry in hot oil until brown. Serve hot.
