Shrimp Frigideira (Frigideira de Camaroes)

INGREDIENTS:
1/2 pound salt codfish 1/2 pound dried shrimp 1-1/2 onions
1 pinch garlic powder 1 dash pepper 1 teaspoon paprika
3/4 cup coconut milk 2 tablespoons oil 1/2 teaspoon vinegar
4 eggs, beaten 1 teaspoon flour 8 olives, pitted and chopped



1 Soak codfish overnight and the next day remove skin and bones, and grind shrimp and codfish together. Mix with this 1 onion, minced, garlic powder, pepper, and paprika. Add coconut milk, oil, and vinegar. Mix well and cook 20 minutes. Beat 2 eggs, stir in the flour, olives, and 1/2 onion, chopped. Combine this with the first mixture, spread in a rather wide baking pan, and cover with the remaining 2 well-beaten eggs, and brown in a 400-degree oven until eggs are well set, 10 to 15 minutes.
