| INGREDIENTS: | ||
| 2 tablespoons peanut oil | 2 large green chiles, seeded and thinly sliced, or 1/2 teaspoon ground white pepper | 6 scallions, thinly sliced, white and green parts separated |
| 2 cloves garlic, minced (optional) | 6 cups cold boiled rice | 1 tablespoon light soy sauce |
| 1 tablespoon fish sauce | pinch salt | 2-3 eggs, beaten |
| 2 tablespoons chopped cilantro | ||
| 1 | Heat the oil in a wok or saucepan and fry the chiles, the white part of the scallions, and the garlic, if desired, stirring continuously, for 1 minute. Add the rice, stirring continuously again until the rice is hot. |
