Fried Rice with Egg and Scallions (Kao Paht Khai)

INGREDIENTS:
2 tablespoons peanut oil 2 large green chiles, seeded and thinly sliced, or 1/2 teaspoon ground white pepper 6 scallions, thinly sliced, white and green parts separated
2 cloves garlic, minced (optional) 6 cups cold boiled rice 1 tablespoon light soy sauce
1 tablespoon fish sauce pinch salt 2-3 eggs, beaten
2 tablespoons chopped cilantro



1 Heat the oil in a wok or saucepan and fry the chiles, the white part of the scallions, and the garlic, if desired, stirring continuously, for 1 minute. Add the rice, stirring continuously again until the rice is hot.
2 Add the soy sauce, fish sauce, and salt, stir, and add the eggs, the green part of the scallions, and the chopped cilantro.
3 Continue stirring vigorously until the eggs are well mixed with the rice and cooked. Serve immediately.
