| 4 eggs | 2 tablespoons milk | 1/8 teaspoon salt |
| black pepper | 2 tablespoons butter | 1 package (8 ounces) Mozzarella |
| 1 tablespoon minced fresh parsley | grated Parmesan or Romano Cheese | |
| 1 | Preheat oven to 350 F. Break eggs into a large bowl, add milk, salt and pepper and beat until frothy. Melt butter in medium size ovenproof skillet, add eggs and cook over moderate heat until eggs are almost set. Sprinkle mozzarella and parsley over half of omelette, fold other half of omelette over cheese, sprinkle with grated cheese and bake, uncovered, about 10 minutes or until top is lightly browned. |
