| INGREDIENTS: | ||
| 1 pound lean ground beef | 1 onion, chopped fine | 1 green pepper, seeded and chopped fine |
| 1 can (7 ounces) tomato paste | 1 teaspoon salt | 1/2 teaspoon oregano |
| 1/4 teaspoon garlic powder | dash pepper | 1 medium zucchini, sliced |
| 1/2 cup grated Parmesan or Romano cheese | 1 package (8 ounces) part skim Mozzarella, sliced | |
| 1 | Preheat oven to 400 F. Saute meat in large skillet until brown. Drain. Add onion, green pepper, tomato paste, 3/4 cup water, salt, oregano, garlic powder and zucchini slices. Sprinkle with 1/4 cup grated cheese. Cover with half of meat mixture. Place a few slices of mozzaarella over meat. Cover with remaining meat. Sprinkle remaining grated cheese over meat and bake, uncovered, 15 to 20 minutes. Cover with mozzarella slices and return to oven just long enough to melt cheese. |
