| INGREDIENTS: | ||
| 1 cup part skim Ricotta | 2 cups finely ground cooked ham | 1/2 cup sour cream |
| 1 tablespoons prepared horseradish | dash Tabasco sauce | 1 cup minced fresh parsley |
| 1/4 cup minced fresh chives | ||
| 1 | Combine ricotta, ham, sour cream, horseradish and Tabasco in a large bowl. Mix well and shape into twelve egg-size balls. Combine parsley and chives. Roll ham balls in parsley mixture and refrigerate at least 1 hour before serving. Serve on a bed of lettuce, garnish with tomato wedges and slices of hard-cooked eggs. |
