Ham Balls

INGREDIENTS:
1 cup part skim Ricotta 2 cups finely ground cooked ham 1/2 cup sour cream
1 tablespoons prepared horseradish dash Tabasco sauce 1 cup minced fresh parsley
1/4 cup minced fresh chives



1 Combine ricotta, ham, sour cream, horseradish and Tabasco in a large bowl. Mix well and shape into twelve egg-size balls. Combine parsley and chives. Roll ham balls in parsley mixture and refrigerate at least 1 hour before serving. Serve on a bed of lettuce, garnish with tomato wedges and slices of hard-cooked eggs.
