| 12 eggs | 1/2 cup skimmed milk, divided | 1 teaspoon rosemary |
| salt and pepper to taste | 1 cup skim Ricotta | 4 tablespoons butter |
| 1 | Beat eggs with 1/4 cup milk, rosemary, salt and pepper in medium size bowl. In a separate bowl combine ricotta with 1/4 cup milk and beat together. Melt butter in skillet, pour in eggs and cook slowly over low heat, lifting eggs gently from bottom and sides of pan as eggs begin to set. Fold in ricotta cheese and continue cooking until eggs reach desired consistency. |
