| 1 tablespoon all-purpose flour | 1 tablespoon curry powder | 1/4 teaspoon salt |
| 1 pound pork boneless loin, cut into thin strips | 2 medium sweet potaotes, cut into 1/4-thick slices, then cut in half | 3/4 cup apple juice |
| 1 medium green bell pepper, cut into thin strips (1 cup) | 2 tablespoons apple jelly | |
| 1 | Mix flour, curry powder and salt in medium bowl. Add pork; toss to coat. |
| 2 | Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork in skillet 3 to 5 minutes, stirring occasionally, until brown. |
| 3 | Stir in sweet potatoes and apple juice; reduce heat. Cover and simmer 5 minutes. Stir in bell pepper. Cover and simmer 3 to 5 minutes or until sweet potatoes are tender. Stir in jelly until melted. |
