Stir-Fried Mixed Vegetables (Niramish)

INGREDIENTS:
1-1/2 pounds vegetables: any four of okra, green beans, cauliflower, summer squash, carrot, potatoes, peas 6 tablespoons mustard or peanut oil juice of 1 lemon
1 tablespoon chopped fresh cilantro leaves salt to taste SPICES: 2 teaspoons Panch Phoran
1/2 teaspoon turmeric 1/2-2 teaspoons ground red pepper (cayenne)



1 Prepare the vegetables, and blanch those that need it.
2 Heat the oil, and fry the spices for 1 minute. Stir-fry the okra first, if being used, for 2 minutes. Then add the other vegetables. Stir-fry for 7-8 more minutes.
3 Then add the lemon juice, fresh cilantro, and salt to taste. Toss for 2-3 more minutes. Serve fresh. Will keep or freeze, but this is not ideal-the crisp texture is lost.
