| INGREDIENTS: | ||
| 1-1/2 pounds vegetables: any four of okra, green beans, cauliflower, summer squash, carrot, potatoes, peas | 6 tablespoons mustard or peanut oil | juice of 1 lemon |
| 1 tablespoon chopped fresh cilantro leaves | salt to taste | SPICES: 2 teaspoons Panch Phoran |
| 1/2 teaspoon turmeric | 1/2-2 teaspoons ground red pepper (cayenne) | |
| 1 | Prepare the vegetables, and blanch those that need it. |
| 2 | Heat the oil, and fry the spices for 1 minute. Stir-fry the okra first, if being used, for 2 minutes. Then add the other vegetables. Stir-fry for 7-8 more minutes. |
| 3 | Then add the lemon juice, fresh cilantro, and salt to taste. Toss for 2-3 more minutes. Serve fresh. Will keep or freeze, but this is not ideal-the crisp texture is lost. |
