In a blender or food processor, combine eggs, lemon juice, vinegar, mustard, and salt. Blend well. With machine on, slowly drizzle in walnut oil and vegetable oil to make a mayonnaise. Taste and add additional lemon juice or salt to taste. Stir in chopped walnuts. |

In a large pot of boiling salted water, cook green beans until bright colored and crisp-tender, 3 to 5 minutes. Drain and rinse under cold water until cool; drain well. |

On a large serving platter or individual dinner plates, decoratively arrange radicchio, chicken breasts (whole or cut crosswise into 1-inch slices), green beans, tomatoes, and eggs. Spoon mayonnaise over chicken. |
