Chicken with Walnut Mayonnaise and Radicchio

INGREDIENTS:
2 eggs 1 tablespoon fresh lemon juice 2 teaspoons white wine vinegar
1 teaspoon Dijon mustard 1/2 teaspoon salt 1/4 cup walnut oil
1-1/4 cups vegetable oil 3/4 cup walnuts, chopped 3/4 pound green beans, trimmed
8 skinless, boneless chicken breast halves, poached 1 head of radicchio, separated into leaves 2 medium tomatoes, cut into wedges
4 hard-cooked eggs, cut into wedges (optional)



1 In a blender or food processor, combine eggs, lemon juice, vinegar, mustard, and salt. Blend well. With machine on, slowly drizzle in walnut oil and vegetable oil to make a mayonnaise. Taste and add additional lemon juice or salt to taste. Stir in chopped walnuts.
2 In a large pot of boiling salted water, cook green beans until bright colored and crisp-tender, 3 to 5 minutes. Drain and rinse under cold water until cool; drain well.
3 On a large serving platter or individual dinner plates, decoratively arrange radicchio, chicken breasts (whole or cut crosswise into 1-inch slices), green beans, tomatoes, and eggs. Spoon mayonnaise over chicken.
