INGREDIENTS:
6-8 artichokes stuffed 2 finely chopped onions
3-4 peeled and diced tomatoes 1 tablespoon finely chopped parsley 1 tablespoon boiled, mashed potatoes
salt and pepper



1 Prepare artichokes for stuffing. Parboil onion in salted water. Drain, add tomatoes and parsley, and cook for about 10 minutes. Remove from flame, add mashed potato and seasoning, and blend well. Fill artichoke hearts, place in oiled oven pan, and bake in preheated 350 F oven for 30 minutes.
