Dried French Beans, Stewed with Tomatoes (Lybya Nashfa bi-l-dim'a)

INGREDIENTS:
1/2 pound dried French beans 1 pound beef 2 onions
3 cups tomato juice 10-12 garlic cloves, peeled and halved diagonally 2 tablespoons chopped parsley leaves
2 tablespoons chopped chard leaves salt and pepper



1 Soak dried beans overnight. Strain and parboil for 5-7 minutes. Drain and set aside.
2 Cut meat into small cubes. Saute onions until softened, then add meat and fry until ir reabsorbs its own juice. Add French beans, tomato juice, garlic, and seasoning and cook for about 1 hour.
