Fillets in Lemon Butter

INGREDIENTS:
1 lb firm fish fillets such as sole or haddock 1/2 to 1 teaspoon salt 1/8 teaspoon pepper
1/2 cup (1/4-lb) butter 1/2 cup chopped fresh parsley 1 tablespoon lemon juice
1/2 cup buttery flavored cracker crumbs 1/2 teaspoon paprika



1 In 12x8x2-inch dish, arrange fillets with thickest, meaty areas to outside edges of dish. Sprinkle with salt and pepper.
2 In 1-qt casserole place butter. Microwave at high 1 to 2 minutes, until melted. Blend in parsley and lemon juice and pour over fish. Top with crumbs, then sprinkle on paprika.
3 Microwave at high 9 to 11 minutes, rotating dish 1/2 turn after 5 minutes, until fish flakes easily with fork.
