Scalloped Oysters

INGREDIENTS:
3 cans (12 oz each) frozen oysters, thawed (about 4 cups) 3/4 cup butter, melted 2 cups fine soda cracker crumbs (about 40 small squares)
1 teaspoon salt 1/8 teaspoon pepper 1/8 tespoon nutmeg
1/4 cup milk



1 Drain oysters, reserving 1/4 cup liquid.
2 In small mixing bowl mix together butter and crumbs. In 10x6x2-inch dish layer 1/3 of crumb mixture, 1/2 of drained oysters, 1/2 of seasonings, then 1/3 of remaining crumbs, rest of oysters, seasonings and crumbs.
3 Mix milk with oyster liquid and pour evenly over top.
4 With knife, poke 3 to 4 holes through layers so liquid goes to bottom. Microwave at high 7 minutes. Sprinkle with 1/4 cup parsley. Rotate dish 1/2 turn. Microwave 6 to 8 minutes, until oysters are firm when pierced with fork.
