| 1 French baguette | 1/4 lb smoked trout | 3 Tbs butter |
| 2 eggs, hard-boiled and sliced | 2 Tbs chives, chopped | 1 lemon, in wedges |
| 1 | Slice the French bread thinly across a shallow diagonal. Butter the bread and then place an egg slice and a piece of trout on each portion. Sprinkle with salt, freshly ground black pepper, and chopped chives. Serve with lemon wedges. |
