INGREDIENTS:
1 French baguette 1/4 lb smoked trout 3 Tbs butter
2 eggs, hard-boiled and sliced 2 Tbs chives, chopped 1 lemon, in wedges



1 Slice the French bread thinly across a shallow diagonal. Butter the bread and then place an egg slice and a piece of trout on each portion. Sprinkle with salt, freshly ground black pepper, and chopped chives. Serve with lemon wedges.
