| INGREDIENTS: | ||
| 1 (10-ounce) package frozen patty shells | 1 cup sliced fresh mushrooms | 2 tablespoons butter or margarine |
| 2 tablespoons all-purpose flour | 1 cup milk | 1/2 teaspoon salt |
| 2 tablespoons Chablis or other dry white wine | 8 eggs, lightly beaten | 1/2 cup commercial sour cream |
| 1/4 cup chopped fresh chives | 1/2 teaspoon salt | 1/4 teaspoon pepper |
| 1/4 cup butter or margarine | ||
| 1 | Bake patty shells according to package directions; set aside. |
| 2 | Saute mushrooms in 2 tablespoons butter 3 minutes. Add flour; stir until smooth. Cook 1 minutes, stirring constantly. Gradually add milk; cook over medium heat, stirring until thickened and bubbly. Stir in 1/2 teaspoon salt and wine. Set aside; keep warm. |
| 3 | Combine eggs and next 4 ingredients; mix well. Melt 1/4 cup butter in a large skillet; pour in egg mixture. Cook, without stirring, until mixture begins to set on bottom. Draw a spatula across bottom of pan to form large curds. Continue until eggs are thickened, but still moist. Spoon egg mixture into patty shells; to with mushrooms sauce. Serve immediately. |
