Elegant Eggs

INGREDIENTS:
1 (10-ounce) package frozen patty shells 1 cup sliced fresh mushrooms 2 tablespoons butter or margarine
2 tablespoons all-purpose flour 1 cup milk 1/2 teaspoon salt
2 tablespoons Chablis or other dry white wine 8 eggs, lightly beaten 1/2 cup commercial sour cream
1/4 cup chopped fresh chives 1/2 teaspoon salt 1/4 teaspoon pepper
1/4 cup butter or margarine



1 Bake patty shells according to package directions; set aside.
2 Saute mushrooms in 2 tablespoons butter 3 minutes. Add flour; stir until smooth. Cook 1 minutes, stirring constantly. Gradually add milk; cook over medium heat, stirring until thickened and bubbly. Stir in 1/2 teaspoon salt and wine. Set aside; keep warm.
3 Combine eggs and next 4 ingredients; mix well. Melt 1/4 cup butter in a large skillet; pour in egg mixture. Cook, without stirring, until mixture begins to set on bottom. Draw a spatula across bottom of pan to form large curds. Continue until eggs are thickened, but still moist. Spoon egg mixture into patty shells; to with mushrooms sauce. Serve immediately.
