Shred the pork into match-shaped pieces. Quarter the peppers, then slice them thin across the grain. Mince the garlic. Cut the scallions into 2-inch pieces. |

Heat 1/2 tablespoon sesame oil in a pan and add the pork. Stir-fry until brown. Add the garlic, scallions and black pepper. Stir for a moment. Add the remaining oil and green peppers. Cook for no longer than 5 minutes or until just tender. Add soy sauce 1 minute before removing from pan. |
