| 2 lbs mushrooms | 3 ozs butter (6 tablespoons) | 1 tablespoon chopped parsley |

| 1 | Saute the sliced mushrooms in the butter until tender, add the parsley and the eggs which you have beaten well. Pour over mushrooms and leave on small flame till eggs are set. |
