Cauliflower and Ham (Karfiol mit Schinken)

INGREDIENTS:
2 heads of cauliflower (approz 1-1/2 to 2 lbs) 1/2 lb lean cooked ham 2 egg yolks
1/2 cup sour cream 1 oz grated cheese (3 tablespoons) 1 oz butter (1 tablespoon) a little butter jor the casserole
1/2 oz breadcrumbs (1-1/2 tablespoons)



1 The cauliflower is cooked and parted into small sprigs. (Again only the top part is used-the coarse end can be used for soup.) Cut the ham into tiny cubes, butter a fireproof dish and sprinkle with breadcrumbs. Put in a layer of cauliflower, a layer of ham, a layer of cauliflower and so on alternately. Mix the cream with the yolks, add the grated cheese and pour over the cauliflower. Sprinkle with breadcrumbs, put a few flakes of butter on top and bake for 1/2 an hour in a medium hot oven.
