Roast Beef Gypsy Style

INGREDIENTS:
4 lb loin roast 2 rashers of bacon, sliced fine 2 large yellow onions, chopped fine
6 Tbs butter 2 cups beef broth or water 1 Tbs paprika
pinch of cayenne 1/2 tsp ground allspice 1/2 tsp ground cloves



1 Preheat the oven to 400 F.
2 Using a small paring knife, cut incisions into the beef and stick a slice of bacon in each. Season the meat well with salt and freshly ground black pepper. Place the beef in a large roasting pan. Put the chopped onions around it. Sprinkle them and the roast with the paprika, cayenne, allspice, and cloves. pour about 1 cup of broth into the pan. Arrange the butter on top of the meat.
3 Put the roast in the oven. After 15 minutes, baste the meat and reduce the temperature to 350 F. Cook, basting occasionally and adding more broth if needed, for a total of 2 hours (about 30 minutes per pound).
4 Remove the roast to a serving platter. The sauce should be quite thick. You may want to increase its volume by adding some more broth and boiling it quickly on top of the stove.
5 Serve with dumplings or potatoes and a vegetable such as cauliflower or carrots.
