Salad Burgers

INGREDIENTS:
1/4 cup cider vinegar 2 tablespoons sugar 1 teaspoon salt
1/8 teaspoon pepper 1 cup chopped onion 1 tomato, diced (1 cup)
1/2 unpared cucumber, sliced paper-thin (1 cup) 2 pounds ground beef 1-1/2 teaspoons salt
1/8 teaspoon pepper 1/4 cup chopped sweet pickle 8 hamburger buns



1 Mix vinegar, 1/4 cup water, sugar, the 1 teaspoon salt, and 1/8 teaspoon pepper; add onion, tomato, and cucumber. Cover and refrigerate 1 to 2 hours; drain well. Combine meat and remaining salt and pepper; mix lightly and shape into 16 patties. Grill burgers quickly over medium coals, turning once.
2 Stir chopped pickle into drained vegetables. For each burger, top a bun half with a meat patty. Spoon on vegetables. Add second beef patty and more vegetables. Cover with bun top.
