Goose Liver Canapes (Gansleberbrotchen)

INGREDIENTS:
1 goose liver 3 tbls butter 1 truffle (save a little for garnish)
1 shallot 1 tbls Madeira salt and pepper
toast or French bread truffle aspic



1 Saute liver in 1 tablespoon of the butter. Cool and chop. Cream remaining butter and mix in finely chopped liver, truffle and shallot. Add Madeira and seasonings to taste and mix well. Heap mixture on squares of toast or pieces of French bread. Garnish each piece with a touch of truffle and a dot of aspic.
