Anatto Water or Anatto Oil

INGREDIENTS:
ANATTO WATER: 1 tablespoon anatto seeds 4 tablespoons water ANATTO OIL: 1 tablespoon anatto seeds
2 tablespoons oil



1 ANATTO WATER: Place the seeds in the water and crush them between the fingers to release the red color. Let stand about 30 minutes. Strain the water and discard the seeds.
2 ANATTO OIL: Fry the seeds in oil for several minutes. When the oil is cool enough to touch, crush the seeds. Let the mixture stand about 15 minutes; then strain and discard the seeds.
