Brandy Butter

INGREDIENTS:
125 g/4 oz unsalted butter 125 g/4 oz castor sugar 4 tbsps brandy
1 tsp lemon juice 1/2 tsp lemon rind 1 tbsp boiling water



1 Cut the butter into 1-inch cubes and put with the sugar and lemon rind into a basin. Beat until creamy, add the boiling water and continue to beat until every grain of sugar has dissolved. Add the lemon juice and brandy and beat in well. Put into lidded wax cartons and store in the refrigerator until ready for use.
