INGREDIENTS:
125 g/4oz unsalted butter 125 g/4oz soft brown sugar 4 tbsps Jamaican rum
1 tbsp orange juice 1 tsp orange rind 1/4 tsp cinnamon



1 Proceed as for brandy butter, using very hot orange juice instead of water.
