Fairy Butter

INGREDIENTS:
125 g/4 oz unsalted butter the yolks of 3 hard-boiled eggs 60 g/2 oz castor sugar
1 tbsp orange flower water, rum, lemon juice or brandy



1 Cream the butter and sugar, beat in the egg-yolks and chosen flavouring. Pass through a fine hair sieve, chill, pile into a bowl and pass with the appropriate dish.
