| 18 slices stale bread | 2 cups milk | 6 ounces almonds, blanched and finely chopped |
| 2 egg yolks | 1 cup sugar | 2 egg whites, stiffly beaten |
| 1 tablespoon butter | 1/4 teaspoon cinnamon | |
| 1 | Soften the bread in warm milk and mash it fine. Mix with the almonds, egg yolks, and sugar. Fold in the beaten egg whites. Pour into a buttered ovenproof dish. Sprinkle with the cinnamon, dot with butter, and let rise in a moderate oven (325 F.) for 1/2 hour. |
