Apple, Onion, and Walnut Salad with Cider Dressing

INGREDIENTS:
1/2 cup walnut oil or olive oil 3 tablespoons apple cider vinegar 3 tablespoons honey
2 cups very thinly sliced red onins 2 5-ounce bags mixed baby greens 4 small red-skinned apples (such as Braeburn), halved, cored, thinly sliced
1-1/2 cups walnuts, toasted



1 Whisk oil, vinegar, and honey in medium bowl to blend. Season dressing to taste with salt and pepper. Mix in onions. Let stand at least 30 minutes and up to 2 hours, stirring occasionally.
2 Combine greens, apples, and walnuts in very large bowl. Add dressing with onions and toss to coat. Season salad with more salt and pepper.
