| INGREDIENTS: | ||
| 100g/4 oz peanuts | 50g/2 oz shallots | 1 small tomato |
| 1 fresh green chilli | 2 tablespoons vinegar | 1/2 teaspoon chilli powder |
| 2 tablespoons finely chopped coriander leaves | juice of 1/2 lemon | salt |
| 1 | In a dry frying pan, toast the peanuts for 5 minutes over a medium heat. Set aside to cool, then skin the nuts. |
| 2 | Dice the shallots and finely chop the tomato and green chilli. Place them in a large bowl with the peanuts, vinegar, chilli powder, coriander and salt. Add the fresh lemon juice and mix well. |
