Peanut Masala

INGREDIENTS:
100g/4 oz peanuts 50g/2 oz shallots 1 small tomato
1 fresh green chilli 2 tablespoons vinegar 1/2 teaspoon chilli powder
2 tablespoons finely chopped coriander leaves juice of 1/2 lemon salt



1 In a dry frying pan, toast the peanuts for 5 minutes over a medium heat. Set aside to cool, then skin the nuts.
2 Dice the shallots and finely chop the tomato and green chilli. Place them in a large bowl with the peanuts, vinegar, chilli powder, coriander and salt. Add the fresh lemon juice and mix well.
