| INGREDIENTS: | ||
| 3 tomatoes | salt and pepper | 1/2 tbls flour |
| butter for frying | 5 tbls butter | 1 cooked egg yolk |
| 1 whole egg | 2 tsp powdered sugar | 1/4 tsp salt |
| 1 tsp salt | 1 tsp mustard | 2 tbls vinegar |
| 1 | Scald, peel and slice tomatoes. Season well. Sprinkle with flour and fry in butter. Keep hot while making sauce, as follows: |
| 2 | Cream butter, mash yolk, beat and add whole egg. Mix in other ingredients. Cook in double boiler, stirring continuously until sauce thickens. Pour over tomatoes and serve. |
