Devil's Tomatoes (Teufelstomaten)

INGREDIENTS:
3 tomatoes salt and pepper 1/2 tbls flour
butter for frying 5 tbls butter 1 cooked egg yolk
1 whole egg 2 tsp powdered sugar 1/4 tsp salt
1 tsp salt 1 tsp mustard 2 tbls vinegar



1 Scald, peel and slice tomatoes. Season well. Sprinkle with flour and fry in butter. Keep hot while making sauce, as follows:
2 Cream butter, mash yolk, beat and add whole egg. Mix in other ingredients. Cook in double boiler, stirring continuously until sauce thickens. Pour over tomatoes and serve.
