Onion and Tomato Salsa

INGREDIENTS:
1-1/2 cups finely chopped onion 3/4 pound plum tomatoes, seeded, chopped 1/4 cup chopped fresh parsley
1/4 cup olive oil 3 tablespoons red wine vinegar 2 garlic cloves, finely chopped
1 tablespoon chopped seeded serrano chiles



1 Combine all ingredients in medium bowl. Season to taste with salt and pepper. Let stand at room temperature 2 hours, stirring occasionally.
