| 5 heads of Cos lettuce | 2 ozs butter (2 tablespoons) | 1-1/2 ozs flour (4-1/2 tablespoons) |

| 1 | Take off the coarse outer leaves of the lettuce, you can usually only make use of these if you take out the middle rib. Put all the leaves into a basin and pour some boiling water over them. Take the lettuce out, letting the water drip off, and chop very finely. It can also be put through the mincer. Fry onion golden, add the flour and the chopped lettuce, add a little water if necessary, salt and sugar to taste. |
