| 10 ounces pasta | 3 tablespoons melted butter | 1/2 cup fresh grated Parmesan or Romano cheese |
| 1-1/2 cups Mirepoix of vegetables | Parmesan or Romano cheese and butter or olive oil for topping | |
| 1 | Boil the pasta in salted water, drain, and toss with the melted butter, Parmesan or Romano cheese, and the mirepoix. Place in a buttered baking dish, and sprinkle more cheese on top. Some people like to drizzle more butter or oil on top. |
