INGREDIENTS:
1 cup milk 1 cup light cream 3 egg yolks, well beaten
1 cup all-purpose flour 1 tablespoon butter, melted 1/2 teaspoon salt
2 cups yellow cornmeal 1 teaspoon cream of tartar 1/2 teaspoon baking powder
3 egg whites, well beaten



1 Preheat oven to 400 degrees F. Bring milk and cream to a boil; cool to lukewarm. Blend in egg yolks. Add flour and blend. Add the melted butter and salt, and beat well. Mix in the cornmeal, cream of tartar, and baking powder. Stir in egg whites until thoroughly mixed. Fill 12 greased gem or muffin tins two-thirds full and bake for 25 minutes.
