Banana Bars

INGREDIENTS:
1/2 cup margarine 1-1/2 cups sugar 2 eggs, well beaten
1 cup mashed banana, 3 medium bananas 1 teaspoon vanilla 2 cups flour
1/2 teaspoon salt 1 teaspoon baking soda 3/4 cup buttermilk



1 Preheat oven to 350 degrees F. Grease a 9x15-inch jelly roll pan. In a large bowl, cream margarine and sugar until light and fluffy. Add eggs one at a time; beat well after each addition. Stir in banana and vanilla. Sift flour, salt and baking soda together. Add to creamed mixture alternately with buttermilk; start and end with dry ingredients. Beat well after each additon. Spread batter evenly into prepared pan. Bake 30 minutes or until bars test done. Cool bars in pan. Frost with a butter cream frosting.
