| INGREDIENTS: | ||
| 4 oxtails, cut into 2" pieces | 1 cup flour | salt to taste |
| pepper to taste | 1 clove garlic, minced | oil |
| 1 onion, chopped | ||
| 1 | Combine flour, salt, and pepper. |
| 2 | Trim fat from oxtails. Wash. Pat dry. Dredge in seasoned flour. Sprinkle with garlic. |
| 3 | Brown tails on all sides in hot oil. Drain off fat. |
| 4 | Add onion to tails and cover with water. Cook slowly until tender, about 2 hours. |
| 5 | Serve with rice, buttered lima beans, and salad. |
