Oxtails

INGREDIENTS:
4 oxtails, cut into 2" pieces 1 cup flour salt to taste
pepper to taste 1 clove garlic, minced oil
1 onion, chopped



1 Combine flour, salt, and pepper.
2 Trim fat from oxtails. Wash. Pat dry. Dredge in seasoned flour. Sprinkle with garlic.
3 Brown tails on all sides in hot oil. Drain off fat.
4 Add onion to tails and cover with water. Cook slowly until tender, about 2 hours.
5 Serve with rice, buttered lima beans, and salad.
