| INGREDIENTS: | ||
| 1 broiler chicken | 1 tsp salt | 1-1/2 cups flour |
| salt to taste | pepper to taste | paprika to taste |
| 1-1/2 cups shortening | ||
| 1 | Wash chicken thoroughly. Soak in bowl of cold water, with 1 tsp salt dissolved in it, for 20 minutes. |
| 2 | Drain chicken. Cut into pieces. |
| 3 | Season flour with salt, pepper, and paprika. |
| 4 | Heat shortening in frying pan. |
| 5 | Dredge chicken in flour and place in hot oil. Cook until golden brown on both sides, about 30-40 minutes total. |
| 6 | Remove to plate covered with paper towels to drain. |
