| 15 carrots | 5cm/2 in piece fresh root ginger | 2 tablespoons mint leaves |
| 2 tablespoons sugar (optional) | crushed ice, to serve | |
| 1 | Put the carrots, ginger and mint together through a juice extractor. Transfer the mixture to a jug and add sugar to taste if desired, whisking until the sugar is dissolved. |
