INGREDIENTS:
15 carrots 5cm/2 in piece fresh root ginger 2 tablespoons mint leaves
2 tablespoons sugar (optional) crushed ice, to serve



1 Put the carrots, ginger and mint together through a juice extractor. Transfer the mixture to a jug and add sugar to taste if desired, whisking until the sugar is dissolved.
2 Serve cold over crushed ice.
