Passion Fruit Cordial

INGREDIENTS:
570ml/1 pint fresh passion fruit pulp 1 teaspoon fresh ginger juice a small pinch of salt
2 tablespoons sugar, or to taste crushed ice, to serve



1 Pour the passion fruit pulp into a blender with 700ml/1-1/4 pints of water. Add the ginger juice and salt, then taste and add sugar as required. Blend until the sugar has dissolved. Serve cold over crushed ice. The remaining cordial can be kept in the refrigerator for up to 1 week.
