Brown Rice Pilaf

INGREDIENTS:
1 cup uncooked brown rice 3 tablespoons vegetable oil 1 large onion, chopped (1 cup)
2 envelopes instant beef broth 1 teaspoon salt 1/2 teaspoon ground cumin
1/8 teaspoon pepper 3 cups water



1 Saute rice, stirring constantly, in vegetable oil until toasted in a large frying pan; remove and set aside. Stir onion into pan; saute until soft.
2 Stir in remaining ingredients; heat to boiling; return rice; cover.
3 Simmer 1 hour and 15 minutes, or until rice is tender and liquid is absorbed. Fluff rice with a fork before serving.
