Paddy Irish-Whiskey Cake

INGREDIENTS:
1 tablespoon grated orange zest 1 cup golden raisins 1/4 cup Irish Whiskey, Paddy brand if you can find it
3/4 cup room butter, room temperature 2 medium eggs, room temperature 2 cups all-purpose flour
1/8 teaspoon salt 3/4 teaspoon baking powder



1 Preheat oven to 350 degrees. Grease or spray a 9 by 9 cake pan. Soak orange zest and raisins in whiskey for 30 minutes or nuke in the microwave on high for 40 seconds and let rest for 5 minutes.
2 Cream butter and sugar in a medium bowl. Add eggs one at a time, beating well after each addition.
3 Sift together flour, salt and baking powder. Add to egg mixture. Beat well. Fold in zest, raisins and whiskey.
4 Pour into cake pan and bake in a pre-heated 350 degree oven for 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
5 Serve warm with whipped cream (and a shot of Irish whiskey for the hardy in the group)!
