INGREDIENTS:
1/2 cup flour 1/2 t salt 2 t sugar
1/4 t baking powder 1 cup coconut, grated 1/3 cup evaporated milk
1 T butter, melted 2 eggs, separated oil for deep frying



1 Sift flour, salt, sugar, and baking powder together. Add coconut, milk, and butter. Whisk egg yolks slightly. Add. Blend thoroughly. Fold in slightly beaten egg whites. Drop by tablespoon into hot oil (350F). Deep fry until golden.
