Homemade Noodles

INGREDIENTS:
2 cups all-purpose flour 3 eggs, lightly beaten



1 Sift the flour into a large bowl and make a well in the center. Pour the eggs into the well. Stir with a fork until the dough becomes soft but not sticky. Turn the dough out on a lightly floured work surface and knead until smooth and satiny, about 7 minutes. Cover the dough and let rest for about 1 hour.
2 Divide the dough into 4 portions. On a lightly floured surface, roll out each portions of the dough to approximately 1/8-inch thickness. Cut noodles to desired thickness. Bring a large pot of salted water to a boil. Cook the pasta until al dente, then drain.
