Honey Oatmeal Crispies

INGREDIENTS:
1/2 cup sugar 1/2 cup brown sugar 1 cup shortening
1 cup honey 1 teaspoon vanilla 2 eggs, well beaten
2 cups flour 1 teaspoon baking soda 1/2 teaspoon baking powder
1/2 teaspoon salt 3 cups quick-cook oatmeal 1 cup flaked coconut



1 Preheat oven to 350 degrees F. Grease cookie sheets. In a large bowl, cream sugar, brown sugar and shortening until light and fluffy. Add honey, vanilla and eggs; blend thoroughly. Sift flour, baking soda, baking powder and salt together. Add to creamed mixture; beat well. Add oatmeal and coconut; blend thoroughly. Drop by teaspoonfuls on prepared cookie sheets. Bake 10 to 12 minutes or until cookies are lightly browned and test done.
