| INGREDIENTS: | ||
| 1/2 cup sugar | 1/2 cup brown sugar | 1 cup shortening |
| 1 cup honey | 1 teaspoon vanilla | 2 eggs, well beaten |
| 2 cups flour | 1 teaspoon baking soda | 1/2 teaspoon baking powder |
| 1/2 teaspoon salt | 3 cups quick-cook oatmeal | 1 cup flaked coconut |
| 1 | Preheat oven to 350 degrees F. Grease cookie sheets. In a large bowl, cream sugar, brown sugar and shortening until light and fluffy. Add honey, vanilla and eggs; blend thoroughly. Sift flour, baking soda, baking powder and salt together. Add to creamed mixture; beat well. Add oatmeal and coconut; blend thoroughly. Drop by teaspoonfuls on prepared cookie sheets. Bake 10 to 12 minutes or until cookies are lightly browned and test done. |
