A Spicy Dish of Hare (Hazepeper)

INGREDIENTS:
1 large hare 1 cup vinegar 3 cups red wine
1 cup and 2 tablespoons butter 2 onions, sliced 5 tablespoons flour
2 teaspoons sugar 1 teaspoon salt 1/2 teaspoon pepper
1 bay leaf 4 cloves 2 tablespoons soy sauce



1 Cut a large hare into ten or twelve pices. Marinate these overnight in vinegar and wine. Drain and saute in 1/2 cup butter for 15 minutes. Saute the onions in the rest of the butter, add flour, and brown. Stir in the wine-and-vinegar mixture and make a smooth sauce. Add hare and onions with the butter they are sauteed in, add sugar and spices, and simmer for at least 3 hours.
