| INGREDIENTS: | ||
| 1 large hare | 1 cup vinegar | 3 cups red wine |
| 1 cup and 2 tablespoons butter | 2 onions, sliced | 5 tablespoons flour |
| 2 teaspoons sugar | 1 teaspoon salt | 1/2 teaspoon pepper |
| 1 bay leaf | 4 cloves | 2 tablespoons soy sauce |
| 1 | Cut a large hare into ten or twelve pices. Marinate these overnight in vinegar and wine. Drain and saute in 1/2 cup butter for 15 minutes. Saute the onions in the rest of the butter, add flour, and brown. Stir in the wine-and-vinegar mixture and make a smooth sauce. Add hare and onions with the butter they are sauteed in, add sugar and spices, and simmer for at least 3 hours. |
