In mixing bowl prepare gingerbread batter as package directs, except substitute applesauce for amount of water called for on package. Add egg if package directs. |

Microwave at medium high, using same directions as fluffy muffins. Because this is a very moist batter, maximum time will probably be required. If desired, sprinkle tops of muffins with cinnamon and drizzle with simple glaze before serving. |

APPLESAUCE GINGER BREAD VARIATION: Prepare batter for Ginger Gems. Divide evenly between 2 greased 8x4x3-inch dishes. Microwave one loaf at a time. Microwave at medium high 5 to 6 minutes, rotating dish 1/2 turn after 3 minutes, until toothpick stuck in center comes out clean. |
