Fluffy Muffins

INGREDIENTS:
2 cups unsifted all-purpose flour 1/2 cup sugar 3 teaspoons baking powder
1/2 teaspoon salt 2 eggs, beaten 1/2 cup cooking oil
1/2 cup milk



1 In mixing bowl stir flour with sugar, baking powder and salt. Make a well in center of dry mixture.
2 Combine eggs, oil and milk. Add all at once to dry ingredients and stir just to moisten. Fill paper lined microwave containers 1/2 full; see comments. Cook according to chart below. Muffins are done when toothpick stuck in center comes out clean.
3 1 muffin, 1/2 to 1 minutes. 2 muffins, 1 to 1-3/4 minutes. 3 muffins 1-1/2 to 2-1/4 minutes. 4 muffins 2 to 3 minutes. 5 muffins 2-1/2 to 3-1/2 minutes. 6 muffins 3 to 5 minutes.
4 For best shape use microwave cupcake or make reusable "homemae mufin supports" by cutting down paper hot drink cups. Check for doneness at minimum time. Redistribute after 1/2 of cooking time. If using cupcaker, rotate 1/2 turn. Rich, thick baters may take longest time.
