Curried Chicken Salad Sandwich

INGREDIENTS:
2 cups chopped chicken breast 1/2 cup mayonnaise 1/2 cup chopped red bell pepper
1/2 cup chopped celery 1/2 cup chopped green onion 1 tablespoon lemon juice
1-1/2 teaspoons curry powder 1/2 cup currants or raisins 1/2 cup chopped peanuts
Kosher salt and freshly ground pepper to taste



1 Combine mayonnaise, red bell pepper, celery, green onion, lemon juice and curry powder in a mixing bowl. Add chicken breast, currants and peanuts and combine well. Season with salt and pepper to taste and let stand for two hours in the refrigerator prior to serving to allow flavors to develop.
