| INGREDIENTS: | ||
| 4 sweet potatoes or yams | 6 bananas, green-tipped | 3 limes |
| 1/2 cup butter, melted | 1/2 cup pineapple juice, unsweetened | 2 T brown sugar |
| 1 | Parboil sweet potatoes 25 minutes or just until tender. Drain. Cool and peel. Peel bananas. Cut potatoes and bananas into 1" to 1-1/2" pieces. Cut each lime into 4 wedges, then cut each wedge in half crosswise. Thread potatoes, bananas, and limes onto skewers. Combine butter, concentrate, and sugar. Heat until blended. Brush part over bananas and sweet potatoes. Place skewers on grill, 4" to 6" from heat. Grill 10 minutes, or until heated through. Turn and baste often. |
